Week of 14th April
This week is relatively quiet - not so much planned activities, more lets see what we do on the run because it's school holidays. Weekly todo list is a little on the light side too. I LOVE my DIYfish pages, without them I wouldn't be able to cope with a planner as small as a personal, but my back wasn't coping with an A5 in my handbag!
Menu plan
I made up this menu planner printable tonight. I'm still not sure if it's *right* for me, but it's a start. I prefer not to plan to have xyz meal on a certain night. Though some nights I do - Fridays I usually have my folks over, so that means a different meal, and Tuesdays and Thursdays are our scary nights - so usually organise to have dinners in the slow cooker or pressure cooker on those nights. So it's a bit hard to do something that'll set some meals in stone, and not others. However, we are in school holidays at the moment - so anything goes! Because we are gluten/dairy free, I find it easier to cook extra at dinners that we can then have for lunches, otherwise I just don't know what to eat!
So on my printable - I have the meal plan on one side, and then lots of lines for shopping list on the other. I did it as a foldable as without it I would never have had enough room!!
Chicken curry stir fry
So easy!! Just chicken, onion, curry powder, coconut milk and stir fry veg (celery, broccolini, zucchini, carrot and onion). Served with brown rice.

Beef satay
Wonderfully easy recipe from 4 Ingredient's Menu Planning recipe book (found here). I added some frozen stir fry veggies and some rice. Kids loved it, and I'll definitely make it again. One of those things that you could always keep all ingredients on hand for those nights where you just don't feel like cooking!
Excuse my post of the whole pan, but I had a meeting tonight, and hubby was working, so needed to have dinner on the run, so we packed dinner into our Thermoses that I have for the four of us! I think they'll pay for themselves very quickly. These nights I used to rely on takeaway, but with being gluten and dairy free, takeaway just isn't an option anymore.

Brekky dinner
Nothing like a good brekky for dinner. Baked beans, mushrooms, boiled egg, sausages and gluten free toast. Yum! Was a hit with the kids too :-)

Windy party!
Had a party today, and BOY was it windy! But no rain thank goodness. Kids had a great time, and were so good at only eating things that I said were ok.

Nachos
I made this nachos using the Celebrate Health meal base. They were on special this week, I think at Coles. Made for a quick and easy meal - only needed to add the mince, kidney beans and a tin of tomatoes. I added lactose free cheese and gluten free corn chips. They were a great hit with the kids!

New Woolies Gluten free selection
Found these in my local Woolworths. Prices are pretty decent (as far as gluten free things go!). Just read labels for other intolerances - I found a lot of them could be made dairy free if I used things like dairy free butter when it asks for butter.

Apricot chicken
I made apricot chicken in the slow cooker. Served with brown rice. I based it on a recipe from the Healthy Chef, though I used tinned apricots rather than fresh. I also added carrot and sweet potato which I blitzed in my Ninja (food processor) to make it extra saucy and add more veggies without the kids noticing. It was great, the kids both had seconds (which is unusual for my son!), and it also freezes well!
Faux icecream
Nothing like faux icecream as an afternoon treat. Kids said it was the best afternoon tea EVER! So I think it was a hit! Just blended frozen fruit (banana, peach, blueberries, strawberries), flaxseed, yoghurt and honey.

Lactose free yoghurt
Homemade lactose free yoghurt. Yum!!! Made in my electric yoghurt maker with dairy free starter and Aldi lactose free milk. Bit bland, but not tart like I expected - it's beautiful with some honey and pureed fruit through it.

Pikelets
Pikelets made from Aldi HasNo maple flavoured pancake packet mix. Turned out great! They taste amazing, and I've frozen them in lots of two, with DF/GF chocolate spread.

McDonalds mummy style
Kids were a bit upset that they couldn't have McDonalds on gluten/dairy free. So I made maccas come to us. Chicken nuggets in rice crumbs, potato wedges (used the apple corer to cut them - best invention ever!), lactose free milk with chocolate flavouring. AND of course you can't forget the toy!
